Sooooo… Spring Break has been fun but it’s good to be back on it. You know a diet’s good when you take a break and then want to come back. Today’s lunch: Blue Cheese Spinach Salad, adapted. Spinach, apple, blue cheese, walnuts, green onions, light raspberry vinaigrette. Tomorrow, I’m adding blueberries. Won’t that be pretty and delish?
