Sometimes we are too hungry to wait to take a picture. Here is what’s left of a 9×13 pan of chicken enchiladas: rotisserie chicken, salsa verde, light cream cheese, cilantro, red enchilada sauce, light cheddar, and corn tortillas…this, my friends, is what I call a diet dinner. #TacoTuesday
My view from the dinner table. The best view! Love sitting around a table with these peeps and this good food. Venison tenderloin & bacon-wrapped, coffee-rubbed venison medallions on the Egg (venison provided by son’s hunting mates); oven roasted herby (from the garden!) potatoes; oven roasted green beans and tomato and cuke salad, all from the produce stand down the road. Bliss. God is great, God is good, let us thank him for our food. Amen.
Spinach, onion, proscuitto, and fresh mozzarella make for a delectable flatbread combo. Added a cup of tomato soup for a light mid-week dinner. My kind of diet food!
Happy Cinco de Mayo to us! Pork tenderloin with a spice rub, slow-cooked in chipotle-orange-lime juice. Slaw really does have a splash of tequila!, which gives it a nice tangy flavor with the lime. Winner winner taco dinner!
